What is Mark Bread?

I’ve always loved cooking. Growing up in a family where both sides had some history in restaurants and hospitality, that’s not terribly a surprise. A long time ago a friend gave me the Tartine cookbook and I started playing with making sourdough breads. While working at the Grove School in California as the chef running the lunch program I needed to explore some alternative methods for producing the bread without having to come in at 4 am so that it could be baked and ready to serve by 11:30 am.
